The People
When the announcement was made to extend the Hokuriku Shinkansen to Fukui, Hisaki Nishino, a Fukui native himself, felt the time was right to embark on his dream of starting a winery. Yet, wine was but a means to and end, with that end being to raise awareness of Fukui and its charms through the promotion of its terroir, products, and culture.
It was in this spirit that he started work on Tsukihi, a restaurant that lives and breathes Fukui - Fukui produce, served with Fukui wine, on Fukui-made tableware. Everything at the restaurant is cooked over wood, and i'd actually jokingly asked Nishino-san while dining at the restaurant if the wood they use if also from Fukui.
His answer?
"Of course it is!"
The Land
Fukui is Japan's 5th smallest by population, and 36th most popular prefecture. That's perhaps why not many have really tried to make win e there, yet after tasting Six Three Estate's wines we were left wondering if they're sitting on a gold mine.
To be fair, Fukui's climate is not the most ideal for winemaking - being on the Sea of Japan side of the country, rainfall is high, and their lower latitude means temperatures soar in summer. Yet, through years of experimentation with varieties and careful site selection, Nishino-san miraculously found a winning formula which allowed not just high-quality viticulture in Fukui but also, get this: organic viticulture.
The Wine
While Six Three Estate cultivates a range of grape varieties, their flagship wines are undoubtedly the Echizen Chardonnay and Echizen Merlot. True to Nishino-san's hyper-local vision, these wines are made from grapes grown only in Fukui, bottled in custom-made clay bottles made, and adorned with Echizen washi paper - all originating within the prefecture.
All wines are made while practicing minimal intervention in the vineyards and winery, and are remarkably expressive as a result. Six Three Estate also holds the honor of being one of the few wineries in Japan to use Mizunara, otherwise known as Japanese Oak, in aging.
