Utashinai’s distance from the sea creates huge swings in temperature that allow grapes grown there to retain good acidity while achieving full ripeness. ‘fleeting’ was created with this freshness in mind. Breaking away from the mold of champagne, the Endos also opted to use varietals suited to their climate, which together with the lactic character from long lees aging produced this incredibly complex and unique sparkling wine.
