While 2023 sent daytime temperatures soaring across Japan, certain high-elevation sites remained somewhat insulated from the full effects due to their low nighttime temperature.
 
The Mimakigahara Plateau was one such area, and the grapes forthis wine were picked in the middle of the night to preserve this precious acidity.
 
As such, the wine shows both cool and warm climate characters, with tropical fruit on the nose, but also a distinct florality and fresh acidity.
